
I published this recipe quite a few years ago as a Christmas cookie idea. Since then I have realized that I was selling this delectable no-bake cookie short. You see, No Bake Peanut Butter Cornflake Cookies are good any time of the year not just at Christmas.
In fact, I think these are BEST made when it is hot and steamy outside and you are craving cookies but turning on the house in your non-air conditioned house seems like the worst idea in the world. Yep, summer in Alberta wants, no NEEDS, these cookies.
Plus, the delicious combo of sweet and salty with the crunch of cornflakes will please the most discerning of cookie connoisseur. And you only need a big pot, a few measuring cups and a spoon. Easy peasy!
Oh and speaking of measuring cups…get one of these adjustable measuring cups for measuring peanut butter and other sticky, hard to measure things. You adjust to how much you need, add the stuff and then push it out using the bottom of the cup. So much easier!
I prefer to make these with Adam’s Natural Salted peanut butter. No, this is not a sponsored post, Adam’s is just my all-time favourite peanut butter because it tastes like peanuts. You won’t find any hydrogenated oils or sugar in it either. Just peanuts and salt (because I think unsalted peanut butter tastes disgusting…sorry it does).
Oh and don’t let the oil on the top of the natural peanut butter scare you either. When you get home, dump the whole jar in a bowl, stir it well and then put it back in the jar. Store in the refrigerator to keep it from separating again.
Don’t try to stir it in the jar. You will end up cursing and cleaning up peanut oil off your countertops. It seems like it would save time and effort but it does not.
After you’ve made your Peanut Butter Cornflake Cookies and they’ve cooled, layer them in a container with wax paper between the layers. If you don’t, you may end up with one giant cornflake cookie clump. It will still taste amazing but may be less aesthetically pleasing.
If you want to save time, you can also press these into a buttered Pyrex dish and cut into squares. Or, if you want a little chocolate in your life, try my chocolate peanut butter no-bake squares.

No Bake Peanut Butter Cornflake Cookies
Delicious, no bake peanut butter cornflake cookies are an easy and delicious treat perfect for Christmas. When storing these, make sure to layer wax paper between the layers or they will meld together in one big lump.
