No-Bake Ritz Cracker Cookies for Valentine’s Day

I wrote this post a few years ago. I wanted to update it and re-release it. Usually, when I do this, I write a whole new post but today I decided not to. I know you are here for my No-Bake Ritz Cracker Cookies for Valentine’s Day but today you will get the recipe AND a bit of nostalgia over harried Valentine’s Days past. Back when Evan wanted to exchange Valentine’s Day cards but only if they weren’t *too* Valentine’s Day-y. I hope you enjoy my little trip down memory lane.

Once upon a time, Valentine’s Day was all about red roses and hot dates. These days it’s about forgetting to buy Valentine’s cards for Evan to take to school until the last minute. Who remembers that they need to exchange Valentines on the 10th since they are out of school the rest of this week? NOT ME, that’s who. So last night I bought two packs of Star Wars cards complete with little tiny glow sticks.

Awesome mom moment, right?

WRONG!

The cards said the word “Valentine” on them. As in “Join the Resistance, Valentine”. Evan said “Mom! I can’t take THOSE to school. They say VALENTINE!” Can you hear the tone? So we spent the next 10 minutes scribbling over “Valentine” with black marker. All fixed!

Where has the romance gone? It has left the building!

The rest of us get to enjoy a few sweet treats to give a nod to the day that celebrates love. Unfortunately, that is stuck in between scribbling on Valentine’s Day cards and after school pick up. That means it has to be easy and uncomplicated while still being delicious.

That’s where these delicious no-bake Ritz cracker cookies come in. They are so good and so easy.

Step 1: Gather your supplies. You’ll need:

Peanut Butter & Nutella

Step 2: Spread one cracker with a thin layer of peanut butter. Spread another with a thin layer of Nutella. Stick the two crackers together.

Dip in Candy Melts

Step 3: Microwave your candy melts using the directions on the package. If the candy coating gets too firm because it cools, microwave for a short time to remelt it. If it gets too firm and melting doesn’t help, add tiny amounts of milk to it until it becomes liquid again.

Sprinkles!

Step 4: Dip each peanut butter cracker into the melted candy coating. Use a spoon to spoon coating over the cracker until it is completely enrobed. Let any excess run off and place on wax paper to cool. If you would like, add sprinkles or drizzle with a different colour of candy melt.

Step 5: Let cool completely, enjoy your no-bake Ritz cracker cookies.

Ingredients

  • 64 Ritz Crackers
  • 1/3 cup Peanut butter
  • 1/3 cup Nutella
  • 12 oz Pink candy melts, can be found at craft or grocery stores
  • 1/4 cup Sprinkles

Instructions
