Instant Pot Creole Chicken

Creole may not be the first kind of food that pops into your head when you think of comfort food, but once you taste this Instant Pot Creole Chicken recipe, you’ll change your mind. Hearty and satisfying, it’s delicious comfort food with a bit of a kick.

Made in the Instant Pot, this recipe is quick and easy. Since minimal preparation is needed, you can have a delicious dinner on the table in almost no time! Plus it goes perfectly with our Creole Instant Pot Black Beans.

Instant Pot Creole Chicken

Instant Pot Creole Chicken Recipe

Ingredients:

  • 1 – ½ pounds chicken (we used boneless, skinless chicken breasts
  • 1 (14.5 ounce) can diced tomatoes, with liquid
  • 1 (1 ounce) can Rotel, with liquid
  • 1 tablespoon vegetable oil
  • 1 large green bell pepper, chopped
  • 1 large yellow onion, chopped
  • 7-ounce ham steak, chopped
  • Salt and pepper, to taste
  • 1 bay leaf
  • Tabasco sauce, to taste
  • 1 (6 ounce) can tomato paste
  • Cooked rice, to serve

Instructions:

Chop onion, green pepper, and ham.

Turn Instant Pot onto saute mode and add in vegetable oil. When that has heated, toss in the ham, onion and pepper. Saute for about 5 minutes or vegetables start to soften.

Add in tomatoes, Rotel and seasonings.

Add chicken to the top and spoon some of the tomatoes over the chicken.

Close the lid on the Instant Pot and turn pressure valve to sealing. Set for a manual-high time of 10 minutes. Allow for a quick pressure release time has completed. Mix in tomato paste to thicken.

Serve over rice.
