Cooking everyday is sometimes a privilege that we take for granted. There are lots of reason that it might not be possible: illness, work schedule, cooking skills (or lack thereof), etc. This weekend I am preparing loads of meals for the freezer for a family member who is ill. I will portion them out so that they feed two people for dinner, fully cook them and put them in the freezer. Then all that will need to be done is thaw them and reheat in the oven. Easy peasy and one less thing they will need to think about.
Once I decided to take on this project, I started racking my brain for which recipes to make. I didn’t want anything too spicy or “weird”. Plus I like things that are a full meal, like casseroles. I am also staying away from tons of soup because I know they have lots of that already. Ease for me was also a plus.
Here are the recipes I came up with:
Beef and Potato Pie – I think I will be able to get 3 double servings out of this recipe.
Crockpot Split Pea Soup – This is the one soup that I am going to make. Mainly because I know it is a favorite and I have a ham bone in the freezer to use. This soup freezes really, really well.
Italian Sausage Pasta Bake – I don’t want to over do it on tomato sauce things but this casserole is a crowd pleaser and freezes really well.
BBQ Meatballs are easy and delicious. Plus they can be combined with easy side dishes for when they are a bit “casseroled out”.
Beefy Spanish Rice – Yummy without being spicy, I think this recipe will freeze really well and make lots of servings for the freezer.
Mac and Cheese – This is the only recipe I am a *bit* worried about. I’m not sure how well the cheese will freeze. However, it is a favorite of the recipients of the food so I am going to give it a try.
I’m planning to buy disposable metal containers for the food. This way it can go straight from the freezer to the oven and they don’t have to worry about returning containers. Easy peasy for me AND them.
