Tomato & Sweet Chili Pork Kabobs

Heating up the kitchen in the summertime can make the evening miserable. Especially when there are so many great grilling recipes out there. Wait….did I say recipes? In the summer, I seem to have developed the inability to read long drawn out recipes. It must be the heat affecting my attention span. How can people make pork kabobs difficult?

I want:

– fresh

– quick

– easy

– relatively healthy

I do NOT want:

– a long list of ingredients (especially spices or odd ingredients because we are still building up the pantry at the cottage so I still don’t have MANY ingredients)

– extensive prep that ties me to the kitchen (I need to ride on the boat!)

Well, this recipe is easy peasy and tastes amazing. I decided to use one of my Blue Dragon cooking sauces as a marinade and basting sauce and it worked amazingly well. While the sauce alone has a bit of a kick to it, using it as a marinade does not make the food spicy at all (which means the 7 year old will actually eat it). The whole family raved about dinner.

Tomato & Sweet Chili Pork Kabobs

The perfect summer dinner. Tomato and sweet chili pork kabobs on the grill. So easy, so simple, so delicious.


  • 4 thick boneless pork chops
  • 1 jar Blue Dragon Tomato and Sweet Chili Cooking Sauce, or similar
  • 1 large zucchini
  • 1 large bell pepper
  • 1 large sweet onion
  • 1 container brown mushrooms
  • 8 metal skewers


  1. Chop pork chops in to 1 1/2" cubes. Place in a glass dish with 1/2 of the jar of Blue Dragon Tomato and Sweet Chili Cooking Sauce. Marinate for 2 hours.
  2. Preheat your grill to approximately 300 degrees.
  3. Cut zucchini in large rounds approx 1 1/2 inch thick. Then cut each round in to quarters.
  4. Core and seed the red bell pepper and cut in to 1 1/2 inch squares.
  5. Peel onion and cut off root and top. Cut half and then cut each half in to quarters. Separate until you get approximately even pieces.
  6. Wash mushrooms and leave whole.
  7. On each skewer, start with a vegetable piece and then build from there. Alternate vegetables and marinated pork pieces. Discard any leftover marinade.
  8. Brush grill with oil and place skewers on the grill. As you are cooking, brush with additional Tomato & Sweet Chili cooking sauce.
  9. Cook until vegetables and pork is done, approximately 10 - 15 minutes.
  10. Serve, preferably on the deck with fresh salads.
